We aim for
elegant, modern British hearty traditional pub food with a
regional European influence. Our food should always be true to
seasonality & locality (where great), celebrating destinations
through food, beer & wine.
1. Does
justice to the quality of the ingredients;
2. Retains
a sense of solid, wholesome dishes e.g. sausages, mash and onion
gravy, pie of the day, ploughman’s lunch etc;
3. Moves
forward in the development of dishes with the same speed, style
and purpose as London restaurants and gastro pubs such as St
John's in Farringdon, The Anchor & Hope in Waterloo.
4. Marries
the flavours of our wines and beers with our dishes;
5. Enables
us to achieve our goal of good food statues in all major
publications.
